Barbecue Guide



1. Food

The choice of food can be based on respective tastes and preferences. Generally speaking, foods suitable for barbecue include meat, fish, seafood, vegetables, fruits, pasta, and soy products.

Meat is the main force of barbecue food. The choices include: lamb skewers, lamb kidney skewers, beef skewers, chicken wings, chicken fillets, chicken fillets and so on. It should be noted that meat products are easy to spoil, so be sure to choose fresh ones.



It is recommended to go to the supermarket to buy packages of marinated meat skewers, and check the shelf life when purchasing.

If you are picky about the taste of the skewers, you can make them yourself. When making the meat, it is best not to choose frozen meat, and the meat should not be cut into large or too fine pieces. Marinate with salt, MSG, ginger juice, onion juice and other seasonings, skewer them with bamboo sticks and set aside. The fish and seafood you can choose from include: live fish, fresh squid, cuttlefish, live shrimp, hairy crabs, fresh scallop skewers, etc. When choosing, pay special attention to the word "fresh". Live fish should be scaled, gutted, cleaned, and marinated with salt and wine. If fresh squid and cuttlefish are roasted directly over fire, they will curl up. You can use bamboo sticks or toothpicks to fix them first. If you want to save trouble, you can go to the supermarket and buy processed shrimp skewers, fresh scallop skewers and other semi-finished products just like buying meat skewers.

2. Seasoning


The basic seasonings are: cumin powder, pepper salt (which can be used instead of table salt), black pepper, chili powder, blending oil, and sugar water. You can also choose barbecue sauces of different flavors according to your personal preferences.



1 Carrot sauce

Add a little soy sauce, chicken broth, salt, lemon juice and MSG to the carrot puree until it reaches a moderate consistency.



2. Bean paste

Add cooking wine, sugar, lemon juice and minced ginger to the cooked bean paste.



3. Tomato sauce

Mix tomato sauce with chili oil, soy sauce, salt and chicken broth.



4. Sweet noodle sauce

Add chili oil, soy sauce, sugar and lemon juice to the sweet noodle sauce.



3. Barbecue tools

There are many kinds of barbecue tools depending on the method. Open flame grilling, charcoal grilling, stove grilling, mud grilling, bamboo grilling, teppanyaki, stone slab grilling, and stone rice are all considered barbecue. In movies and TV dramas, we often see scenes of roasting a chicken or rabbit on a wooden stick over a campfire, which is roasting over an open flame. This method of grilling is often mentioned in some wilderness survival books. In fact, this method is not recommended. For ordinary people, it is difficult to control the temperature when grilling over open flames, and open flame grilling is more likely to produce substances that are harmful to the human body. At the same time, making a bonfire in the wild is more harmful to the environment and is very unsafe, so it is recommended not to try open flame barbecue. Compared with several barbecue methods, only charcoal barbecue is easy to operate, easy to control, causes the least harm to the environment, and can grill the most diverse types of food. It is recommended that you use charcoal for outdoor barbecues. The tools used for charcoal barbecue include: barbecue stove, charcoal, poker, knife, fish clips, toothpicks, etc.

Pokers, fish tongs and knives are also common barbecue tools. When choosing, choose those that are easy to clean and disinfect. Plates, chopsticks, and toothpicks are all necessary, especially toothpicks, which are very useful. They can fix foods that are easy to curl, such as cuttlefish, and can also serve as a tool for taking food instead of chopsticks. Prepare several plates to place food, keeping raw and cooked food separate. Clean the skewer, knife and grill before grilling.



4. Venue Time

Prepare food, seasonings and stove and you can go barbecue outdoors. But not all wild places are suitable for barbecue. It is best to choose a place with good scenery and convenient transportation. Barbecuing is prohibited in some forest areas and reservoir areas, so you need to find out in advance. When choosing a venue, you should also pay special attention to safety and fire prevention. There should not be shrubs or too many trees around the barbecue site, and there should be no flammable items around the downwind outlet. Also be careful not to choose places where there are many mosquitoes. Do not choose to barbecue in enclosed places such as caves or rooms to prevent carbon monoxide poisoning. Generally speaking, spring and autumn are suitable seasons for barbecue. Windy days and rainy days are not suitable for outdoor barbecues.
